The coast shapes the IGNI menu construction from day to day. Chef Theo Clench spent his childhood by the sea, and fostered a lifelong connection with food through family fishing and foraging trips. It’s this early fluency with the water’s edge, knowing what to catch and when, that runs directly through the IGNI menu.
Sustainably Sourced, Seasonally Driven
The IGNI menu naturally shifts with the seasons, meaning that the ingredients used and dishes we offer reflects what is at its best right now. This is only possible because of the direct relationships we’ve nurtured with the fishers and suppliers we trust: people who tell us what’s worth having this week, and what isn’t. From those conversations, the menu grows; and it’s all the more sensational for it.
The Seafood on the Menu
IGNI is built around tasting menus. A single piece of fish, given its own course and its own moment, can say something that a sharing plate never quite can. Across six or nine courses, or three at lunch time, the kitchen moves through texture and intensity, from the brightness of an oyster to the depth of a slow-worked monkfish. Each visit is different, so even returning diners experience something new.
