We harness fire as a multi-dimensional culinary instrument; not just for heat, but for transformation. Charring, searing, ember-roasting, hot smoking, cold smoking, ash curing; each technique is used with precision and restraint. Our menus have strong coastal influences, as well as Japanese flavours, and an imaginative approach that celebrates texture and depth of flavour.

Setting the direction for IGNI is Theo Clench, a Sussex-born chef with an enthusiasm for seafood sparked by his coastal childhood. With global experience and a Michelin-star restaurant amongst his achievements, his new home at IGNI in Mayfair is a place in which he can inspire the next generation.
